Photographs from last Leather making classes one week before the national COVID‐19 shutdown in March, 2020. A group of over forty, (40), adult women participated in th classes held in February and March of 2020.
"A working group comprised of staff from the U.S. Departments of the Treasury, of Health and Human Services, and of Agriculture is coordinating and sharing information about strategies to expand the availability of nutritious food in underserved areas. In cooperation with that working group, researchers from USDA’s Economic Research Service (ERS) developed a census tractlevel definition of food deserts in order to start identifying areas of the Nation that may be in need of improved food access. Census tracts are identified as food deserts if they meet both low-income and low-food-access criteria. Using the specific definitions of both low income and low access (as detailed in the subsequent discussion), 6,529 census tracts were identified as food deserts across the Continental United States ... " 1
The United States Department of Agriculture (USDA) divides food insecurity into the following 2 categories:
Food insecurity may be long term or temporary. It may be influenced by a number of factors including income, employment, race/ethnicity, and disability. 2
- Low food security: "Reports of reduced quality, variety, or desirability of diet. Little or no indication of reduced food intake."
- Very low food security: "Reports of multiple indications of disrupted eating patterns and reduced food intake."
Ravik Foundation ran a demonstration/proof of concept project during the last week of April 2020. The hypothesis of this demonstration project was that food insecurity has a profound effect upon the elderly of the community especially during the time of general quarantine during pandemic. Ravik Foundation representatives chose an independent living senior high-rise in Clayton County, Georgia.
Ravik Foundation discovered that most of the occupants of this independent living high-rise possessed fully functional automobiles which they drove and their income levels we such that they were able with no problems to purchase adequate amounts of food to sustain healthy nutrition. Yet, because of the fears and traumas of being exposed to diseases and unhealthy environments that would compromise or even destroy their fragile immune systems, most of the elderly declined to go grocery shopping during the height of the pandemic and lack of effective preventive measures from the pandemic gripping this nation.
